This Kashir Gaad or Kashmiri Fish Recipe is prepared without tomatoes and is often served with simple boiled rice and crispy papad on the side.
Ingredients
1 Kg or 2 medium-sized trout fish, or fish of your choosing
2 teaspoons turmeric powder.
½ teaspoon fennel powder
1 pinch of asafoetida
½ teaspoon ginger powder
1½ teaspoon red chili powder
2 crushed cloves
Kashmiri spice cake (Kashmiri ver)
Oil for Cooking and Frying
Salt to taste or around 1 teaspoon
Directions
- Clean and wash the fish. Scrape the fish's scales using a knife
- Cut each fish into four or five circular pieces and rinse again
- Place them in a colander and season with salt and 1 tablespoon turmeric for 15 minutes
- In a frying pan, heat half a cup of oil
- Deep fry 2 to 3 pieces of fish at a time until golden brown
- Heat 3 tablespoons of the same heated oil that was used to fry the fish in a frying pan (conventional technique), or heat new oil and discard the leftover oil
- Add the chilli powder, asafoetida, and a small amount of water (approximately 2 tablespoons). Sauté on low heat
- Add 3 cups of water and all of the remaining ingredients to the chilli mixture in the pan
- Add and mix the fried fish with the hot chilli mixture
- Cover the fish and cook for 5 minutes in this hot chili sauce
- Simmer for 30 minutes, occasionally monitoring the water consistency
- You can add extra water if needed. Fish break easily when heated, so do not stir when cooking. But shake the pan regularly to keep it from sticking to the base
- When the fish has absorbed the majority of the water, it is ready
- If Kashmiri spices are available, sprinkle them on and cover for 5 minutes
- Typically, this meal is served cold with white rice.
