Crowned the king of Kashmiri meat dishes, this timeless favorite steals the show at every saal (feast).

Ingredients

  • ½ kg or 1lb leg or shoulder portion of lamb or goat meat

  • 1 ½ tsp. red chili powder/mertschwangan

  • 1 tsp. shonth/ginger powder

  • ½ tsp. badiyan/fennel powder

  • 4 crushed cloves/roung/loung

  • 1 ½ tsp. zeera/ white cumin powder

  • 1 ½ stick crushed dalchini/ cinnamon

  • Pinch of yeng/heeng/ asafetida

  • 2 tbsp. yogurt/zamutdud

  • 2 big crushed elaichi/cardamom

  • 4 small elaichi/ cardamom

  • ½ tsp. black zeera

  • 4 tbsp. of vegetable cooking oil

  • Salt to taste

Directions

  • Rinse the meat thoroughly and let it drain in a colander to remove excess water.
  • Heat oil in a pressure cooker or a cooking pan.
  • Add heeng, dalchini, a pinch of white zeera, 2 crushed small cardamoms, 2 crushed large cardamoms, and crushed cloves to the hot oil. Sauté over medium heat.
  • Introduce the meat and shallow-fry it until it turns brown, ensuring the released liquid is absorbed.
  • Incorporate red chili powder and yogurt, frying until the yogurt loses its white appearance.
  • Add shonth, badiyan, and salt to the mixture.
  • Pour in ½ cup of water.
  • Pressure cook for 5 minutes or simmer in a pan at medium heat until the meat becomes tender.
  • Turn off the stove and wait for the pressure to drop before opening the cooker.
  • If there's excess liquid, simmer until the desired consistency is achieved.
  • Grind white zeera and green small elaichi together.
  • Sprinkle this ground mixture along with black zeera on the meat, then cover it. This will enhance the aroma of the dish.

Notes

  • Unlike Hawkins, Prestige and Futura pressure cookers lack a whistling mechanism to signal the end of cooking. Therefore, when using these models on electric inductions, be extra vigilant!
  • After 10-15 minutes of cooking, swiftly remove the cooker from heat and let the pressure release naturally inside. This ensures your dish doesn't overcook while you wait for a whistle that won't come.
  • Remember, electric inductions can keep things simmering even after you turn them off, so swiftness is key.
